Satisfying No Fat Salad Recipe

I'm often asked for low fat or no fat raw vegan recipes. Here's one we came up with today and it was delicious. It's satisfying, tastes great and takes just a few minutes to make. Most importantly, it has no overt fat!

Tomato & Celery Green Salad

  • 1 large bowl of greens
    (I used baby spinach, romaine, & arugula)
  • 4 green onions
  • handful of cherry & pear tomatoes (or choose your own)
  • handful of alfalfa sprouts (optional)

Dressing

  • 2-3 large tomatoes
  • 2 green onions
  • 3 celery stalks
  • Juice of 1 lemon
  • handful of soaked sun dried tomatoes (optional, good for transitional meals)

Organic or locally and naturally grown produce is always recommended.

Throw all dressing ingredients in a blender or food processor and pulse a little to leave pieces. Dress the salad and enjoy!
